    I have been wanting to start recreating my favorite baked goods with a healthy twist. After finding out my body is unable to break down soy and corn, I started to realize how many of the things I loved, especially ones I thought were “clean,” were actually not.⠀⠀I decided to try making my own zucchini bread that is grain-free, soy-free, dairy-free, corn-free and vegan!     Excited to share a new creation of mine that I can’t get enough of. It’s packed with a ton of vitamins (A, C, B, K), minerals, omega-3, antioxidants, fiber, & protein 💪🏼⠀ This “Macro Bowl” includes kale massaged in avocado oil, sweet potato, beets, baked cumin chickpeas, sunflower seeds and quinoa!⠀⠀I dressed this bowl with Trader Joes almond butter turmeric dressing, which is anti-inflammatory and delicious 😋

    Matcha Banana Walnut Muffins

    *YIELDS 10 MUFFINS / GLUTEN-FREE INGREDIENTS: 4 ripe bananas 2 eggs 2 tbsp date syrup (alternative to maple syrup) 1 tbsp coconut oil, melted 1 tbsp Melt Organic plant based butter, melted 1 + 1/2 tbsp matcha powder 1 tbsp Lakanto monkfruit sweetener 1 tsp baking soda 1 tsp baking powder 1 + 1/2 cups almond flour 1/4 cup walnuts, chopped Coconut oil cooking spray DIRECTIONS: Preheat oven to 375°F (190°C) In a large mixing bowl, mash 3 bananas up with a fork.
